You follow rum production from raw molasses to the finished bottle. St. Lucia Distillers, founded in 1931, makes nearly all the island's rum on a former sugar estate 15 minutes south of Castries.
Raw Materials and Fermentation
The walk starts at the molasses tanks, where your guide explains why St. Lucia imports molasses from neighbouring islands. Next are the open-top fermenters, holding yeast strains bred for Caribbean rum.
Distillation

Ageing
The warehouse holds more than 8,000 casks, mostly ex-bourbon American oak with some ex-cognac French oak for finishing. The tropical climate speeds up ageing, so a five-year Caribbean rum can drink like a much older Scotch.
